Monosodium glutamate (MSG)

Monosodium glutamate (E621) is the sodium salt of glutamic acid, used as a savoury ("umami") flavour enhancer in snacks, sauces, and ready meals. EFSA considers it safe at normal intakes; reports of "MSG symptom complex" have not been confirmed in controlled studies.

MSG provides the umami taste also found naturally in tomatoes, cheese, and mushrooms. It contains sodium, so it contributes to a food’s salt content.

Controlled trials have not reliably reproduced the headache/flushing symptoms historically attributed to MSG. In 2017 EFSA set a group acceptable daily intake for glutamates, noting that typical high consumption could exceed it, which is why it is flagged as moderate rather than low concern.
